Area Operations Manager - F&B

Recruiting on behalf of a confidential client - a multi-brand Saudi F&B group

About the Company

A nationwide Saudi F&B group operating multiple brands across QSR, casual dining and coffee formats, with a store opening pipeline running through the next three years. The Central Region cluster is one of the group's largest, and it needs an operator who can hold the standard across every door.

Position Summary

You own a cluster of 12 to 20 outlets - sales, profitability, guest experience and people. The job is to make the operating standard identical whichever door a guest walks through, and to make the P&L work while doing it. Reporting to the Regional Operations Director.

Key Responsibilities

Commercial

- Own the cluster P&L: drive top-line growth while protecting prime cost and outlet EBITDA.

- Analyse daily and weekly performance - sales per outlet, average ticket, transaction count, channel mix - and act on the outliers.

- Control food cost and waste through inventory discipline, recipe adherence and supplier compliance.

- Optimise labour scheduling against forecast demand; manage overtime and absenteeism.

Operations & Standards

- Visit outlets on a structured cycle and audit brand standards, cleanliness, service speed, food quality and safety.

- Guarantee food safety and regulatory compliance; keep every outlet inspection-ready at all times.

- Monitor delivery aggregator performance and ratings, and protect the unit economics of the delivery channel.

- Lead new outlet openings in the cluster from site handover to steady-state trading.

People

- Coach restaurant managers on daily execution and hold them accountable for their own numbers.

- Manage frontline talent: recruitment, onboarding, training completion, succession and Saudization targets.

Qualifications

- Bachelor's degree in Hospitality Management, Business Administration or a related field.

- HACCP Level 3 / food safety management certification is mandatory.

- SFDA food safety supervisor training; ServSafe or equivalent an advantage.

- 8+ years in F&B or multi-site retail operations, including 3+ as Area or District Manager.

- Proven accountability for a cluster P&L of SAR 40M+ annual revenue.

- Experience managing 150+ frontline staff through unit managers.

- Track record of improving same-store sales and outlet-level EBITDA.

- Valid Saudi driving licence.

Technical Skills

- Outlet P&L: food cost, labour cost, controllables, prime cost and EBITDA.

- Recipe costing, yield management, waste tracking and inventory variance.

- Forecast-driven rostering and sales-per-labour-hour management.

- POS and back-office systems - Foodics, Oracle Simphony, Omega or SAP Retail.

- New outlet opening critical path, including municipality, Baladi and civil defence licensing.

- Aggregator operations (HungerStation, Jahez, Keeta, Talabat) and their real margin impact.

Preferred Profile

- Excellent Arabic and English.

- Franchise-brand experience an advantage.

- Saudi nationals preferred.

- Riyadh-based, comfortable being in outlets rather than at a desk.
