Coffee Roasting
Job Purpose
Manage and optimize green coffee roasting operations to achieve the best sensory expression of each coffee lot while maintaining product consistency, operational efficiency, and minimizing waste.
Key Responsibilities
1. Green Coffee Receiving and Evaluation
- Inspect and evaluate green coffee samples received from suppliers.
- Measure moisture content, density, and bean size.
- Identify and classify defects according to quality standards.
- Ensure proper storage and handling of green coffee to preserve quality.
2. Roast Profile Development
- Design and develop roast profiles (Roast Curves) for different coffee origins and processing methods.
- Define and optimize key roasting parameters, including:
- Charge Temperature
- Turning Point
- Rate of Rise (RoR)
- First Crack
- Development Time
- Adjust roast profiles based on coffee processing methods:
- Washed
- Natural
- Honey
- Experimental Processes
3. Roasting Operations
- Operate and manage commercial roasting equipment, including:
- Probat
- Loring
- Giesen
- Monitor and control temperature, airflow, and drum speed throughout the roasting process.
- Record and maintain accurate roasting data for all production batches.
4. Quality Control and Sensory Evaluation
- Conduct regular cupping sessions to evaluate roasted coffee quality.
- Assess key sensory attributes, including:
- Sweetness
- Acidity
- Body
- Balance
- Flavor Profile and Aftertaste
- Compare production batches against approved quality standards.
- Recommend profile adjustments and process improvements to ensure consistency.
5. Production and Inventory Management
- Plan and schedule daily roasting production.
- Monitor green and roasted coffee inventory levels.
- Track and analyze roasting shrinkage and yield percentages.
- Ensure production readiness to meet commercial and wholesale demand.
Technical Skills & Qualifications
- Strong understanding of heat transfer principles:
- Conductive Heat
- Convective Heat
- Radiant Heat
- Proficiency in roasting software and data analysis tools, including:
- Artisan
- Cropster
- Ability to interpret and analyze roast curves and roasting data.
- Advanced sensory evaluation and coffee cupping skills.
- Strong analytical, organizational, and problem-solving abilities.
